A New Year

Happy New Year! We had a wonderful day at home yesterday. I cooked breakfast (breakfast burritos…YUM!), we played games, watched a movie and just relaxed. It’s about time, right?

So, have you come up with your list of New Year’s Resolutions? I do have some things that I want to improve this next year…so I guess those are my resolutions. I hesitate to call them that, I’m unsure why.

While I was making breakfast yesterday, the kids and I had a conversation about things we could do this next year to be better people, more healthy, etc. etc. Kyle’s resolution was something like this: “I want to love people and be their friends.” (He’s a sweet boy, isn’t he?) Haley’s went like this: “I want to make a fairy princess.” (I really have no clue what she meant by this! I can only guess there is some toy that turns into a fairy princess.) And well, I didn’t ask Taylor. I would, however, be willing to place a bet on what he would say. Can you guess? He’s nearing two, he knows a handful of words that everyone can understand. Yep! His answer would surly be “No!” (and if he was holding a favorite toy, or a spoon, or a fork, or a plate, or a cup or just about anything else….he might follow that No! with a MINE. )

Oh, I love my kids so much! I want to give them the world. I want to protect them from everything forever. So, I know this isn’t possible, but my resolution does have to do with making sure I give them what their little growing bodies need.

#1. Feed my family more healthful, prepared at home meals.

We’re super busy and if I don’t plan well…then it’s usually convenience foods (not necessarily fast food though) for us b/c by the time I think of dinner everyone is starving.

I have my list of foods that I’m going to prepare for the freezer later today. That makes my life much easier. With very little preparation, I can have a complete meal ready by pulling one of these pre-made / frozen dishes out of the freezer.

Also I have a couple of books that I’m quite excited about. One was given to me by my Aunt Marie, Busy People’s Slow Cooker Cookbook. I’ve already tested some of these recipes, and plan to try more out later in the week.

The other book I just picked up at Target. I had heard about it previously, but hadn’t seen it in the store until Monday night. It’s Jessica Seinfelds’s Deceptively Delicious. The idea being that you hide pureed veggies (and fruits) in the foods that your kids like and will eat. This boosts the nutritional value (YEAH!) and helps your pallet get used to the flavors of these veggies. In addition to recipes, there are tips inside from other mothers, a dietitian, and the Seinfeld’s themselves.

This morning, while the kids watched some cartoons, I purred sweet potatoes, butternut squash, broccoli, spinach, carrots, cauliflower, avocado, bananas, pineapple and maybe something else. I have a list of recipes that we will be testing out of this book over the next week…so stay tuned. Hopefully my kid’s will eat it up! Next time I go to Costco, I plan to buy some of these veggies in bulk. Preparing and pureeing them all at once will be tons of work, but will help me in the long run.

Okay…so ready for #2, 3, 4 and more? Well..I have to think of them first. I’ll keep you posted. 🙂 Now it’s off to prepared a million freezer friendly meals!

    well, good for you! Let me know how it works for ya! 🙂 (As I drink a DP!) I also won’t make any resolutions. So much to improve…so little time. 🙂

    Looking forward to hearing how the meals turn out…I’m much more of the “convenience cooker” than a “meal preparer”!

    I’ve really been wanting to try the
    Deceptively Delicious one. Anything crockpot/slow cooker I adore.

    My fav is rice pudding with apples & raisins. Sad part about that is I’m the only one who likes it.
